This delicious dish is from Daverick Leggett, and is simple to prepare – great for cold nights – and yummy leftovers!
4 onions – sliced in rings
2 lemons – cut into eighths
½ tspn cumin
1 tspn 5 spice
Few small pieces of cinnamon bark
Pinch of saffron
Handful each of fresh coriander and parsley – chopped
8 pieces chicken – wings or legs
Handful of green olives
Lay onions and lemons in an oven proof dish, sitting 4 chicken pieces on top
Sprinkle with half the herbs and spices. Repeat to make 2 layered dish.
Cover dish and cook in oven for 1 ½ hours at 375 or in slow cooker on low heat for around 5 hours
Scatter olives on top before serving
