Cabbage pancakes

Cabbage is so tasty and contains sulphur compounds that help with hormone clearance for balanced and symptom free periods.  This is my favourite way to eat it, and its easy to make – and tastes good the next day too!

Ingredients

  • Shredded cabbage: Shred it yourself or for ease you can use bagged pre-shredded cabbage or a coleslaw mix.
  • Spring onions: I use the green parts.
  • Almond flour.
  • Eggs: I use large eggs.
  • More soy sauce or tamari.
  • Black pepper.
  • Minced garlic.
  • Oil for frying: I use either refined coconut oil, avocado or olive oil.

Instructions

  • Mix all ingredients together – starting with cabbage, spring onions and almond flour.  Then add egg, soy/tamari, pepper & garlic after pre-combining in a small bowl
  • Cook the fritters in hot oil, gently flattening them with the spatula – cook 3 mins each side over medium-high heat.
  • Enjoy with a dipping sauce of your choice. Keeps well in the fridge for 3-4 days, or freeze after separating them with baking paper squares.
