A quick and easy addition to a bit of salad, to add protein, fibre and make you feel full due to the beans combined with essential fats. I also sometimes eat this as a snack when I’m steering away from sweet foods. Combine everything in a bowl and mix with a spoon before serving.
1 tin 4 bean mix
1 avocado – cubed
1 tomato – cubed
1/4 red onion – cut in small pieces
Handful of fresh herbs – chopped
Good pinch of salt and pepper
Healthy glug of extra virgin olive oil
Splash of balsamic vinegar
