Leftovers from dinner can be used for breakfast – and savoury breakfast is something we don’t always consider. There is no reason not to do your meals ‘backwards’ if that suits your lifestyle better, and starting the day with a hot nourishing breakfast will set you up for a bright day! Why not try:
- Leftover grains – eg brown rice
- Leftover veggies, or bok choi, kale, capsicum, onion, garlic, tomato – anything you have to hand
- 1-2 eggs/handful seeds or nuts
- Sesame or coconut oil
- Tamari or soy sauce
- Fresh herbs if desired
Fry up the veggies & rice in the pan, adding an egg/seeds, herbs and the tamari towards the end before serving.
