This simple tasty dish is great as a soup by thinning it down, serve with wholegrain bread, or keep it thicker to use as a dip/spread/topping for sweet potato & serve with steamed vegetables.
3 cups of water – bring to boil
Add 1 cup red split lentils, 1 stock cube and 1 chopped onion, reduce and cook for 10 minutes.
Add 1 can coconut milk, 1 tspn curry powder and 1 tbspn dried marjoram, cook for a further 15 minutes.
